Leftover Soup
If you are like me you usually end up with some leftovers after dinner is over and everyone has eaten until they are full. I hate to waste food so I’ve become an expert at re-using leftovers and not letting anything go to waste. Not only does this keep me from wasting food it also saves me some money. Here is one suggestion for a way to save some of those leftovers and re-use them later.
I have a one-gallon, plastic, ice-cream bucket in my freezer. At the end of every meal any left-over vegetables (without any sauce on them) and any meat (except hamburger) that we aren’t going to eat for lunch later, goes into that bucket. The meat, usually steak, pork chops, roast or chicken, is cut into bite sized pieces before it is put in the bucket. In the winter when we are hungry for a good, hearty stew I take the bucket out of the freezer and let it thaw, then I dump the whole thing into a stock pot with as much broth and water as necessary to make a soup and turn on the stove and let it all boil together. This makes a very tasty stew very quickly because all of the ingredients are already cooked and seasoned.
Spring and Summer are the perfect time to start a bucket of leftover soup because the fresh vegetables are so good! When you make your soup in the middle of winter you’ll get to bring a bit of the sunshine back from summer!

I’ve been doing this for years. One time my son had a bunch of friends over and lunch time rolled around with no one ready to go home. I called all the moms and told them I’d be feeding the kids that day. I made the soup and 4 of the mom’s called me back because their kids wanted them to get my “recipe” lol. Good soup
